Apple, Cranberry, Walnut and Blue Cheese Salad

Even though this salad is easy and comes together in just a few minutes, the combination is perfect.   It is crunchy, sweet and tangy.  I usually have a salad for lunch every day and this is going to be on my weekly rotation as I always have these ingredients on hand.     Favorite brand of  Gorgonzola  and Blue Cheese If I don't make my own vinaigrette I like to use Newman's Own Creamy Balsamic.    Ingredients:  lettuce (any kind)  apple, sliced (I like golden delicious) dried cranberries blue or gorgonzola cheese, crumbled walnut pieces Instructions: In a large bowl, toss together all the salad ingredients. Drizzle vinaigrette over the salad and toss. Serve                                                                                                 

Pumpkin Bars with Cream Cheese Frosting

 If you're a pumpkin lover then you have got to try this recipe.  This sweet treat comes out moist and fluffy and this recipe makes plenty to share with loved ones who will love you all the more for sharing!  The recipe comes from my friend Ali Eisenach's cookbook, When Life Gives You a Garden . By the by, I have a new found love for cupcake stands.  I found this one at a local shop but you can also find it online at Glitterville .  It has become one of my favorite things that I own and it will probably appear in many more foodie pictures in the future.  But back to the Pumpkin Bars! Ingredients: 4 eggs 1 2/3 c sugar 1 c oil 16 oz can pumpkin 2 c flour 2 t baking powder 2 t cinnamon 1 t baking soda 1 t salt Directions: Beat eggs, sugar, oil, and pumpkin until fluffy.  Add dry ingredients and mix well.  Pour into a greased 15x10x1 inch pan.  Bake at 350° for 25-30 minutes.  Cool and frost with cream cheese frosting. The Porcini Season is almost over

I have just realised that I forgot to blog about the mushroom season. I think that it was because the season started so late this year and we had almost given up on being able to find any. We missed them in the middle of September as they grew before we came back from Italy. So we had to wait until the next growing cycle and from that time on we have been lucky. I wish that I could say that we were lucky enough to have picked these beautiful fungi porcini in Italy, but we didn't instead we were lucky enough to find them right here in Wales. These two little beauties were growing together and refused to become detatched from each other. I love it when the mushrooms grow like this it's so very fairy tale. I left them until last to cut up as I didn't want to destroy the close relationship. I really do think that I'm getting sadder and sadder.
